Morey,
You don't so much "remove" the old hotkey  as simply go into Properties for 
the icon and revise the target field so it points to where the new version 
of Jaws is that you want the hotkey to launch.  But Laura seems to have done 
this properly, only to find the field deleting what she's entered there so 
that, in effect, there simply isn't a hotkey anymore.

Regarding Jaws 8.0 hot key.
Could you still have that hot key assigned to an earlier version of Jaws and
you did not remove it?
