Hi, I found that both the typical and custom install both allowed you to select synthesizers and/or Braille displays towards the end of the installation. Perhaps you're thinking of JAWS versions prior to 7.1, when they used good old InstallShield technology back then.

probably custom. I'm not sure if custom will ask you for a braille display, but it won't hurt to go through the install. It should ask you before it says ready to install, if it does ask, at all.
