You'll need to get the authentication token from the DC's, so you'll
need at
least Kerberos-Sec (UDP), LDAP, LDAP (UDP) and Ping from "VPN Clients"
to
the "Domain Controllers" object (or the machines themselves).

To hit the shares on the server, you'll need CIFS (TCP) and CIFS (UDP)
from
the "VPN Clients" to that server.

If using Outlook RPC (as opposed to HTTPS or OWA) you'll need RPC (all
interfaces) from "VPN Clients" to the Exchange box(es).  You may find
that
you'll have to also add RPC (all interfaces) from "VPN Clients" to the
DC's
depending on your environment.
