If you have grub installed, on boot, you can
dynamically append "single" , and boot into single
user mode, which will take you as a root user. Change
the password using the passwd command.
Google around for single user mode HOWTO.
From the LiveCD, you can chroot to /, and run passwd
to change the root password.
