[guispeak] Ed sharp--search and replace

I have a folder containing some 300 small text files.  Since 
most of these were copied from the web, many contain 
characters purporting to be the apostrophe but are not.

I wish to examine each file in this folder to find and 
replace such characters with Ansi 027 or whatever the value 
is for the genuine apostrophe.  I know how to search and 
replace within one file; but, what does one do to tell Ed 
Sharp to search each text file in the folder to see if any 
characters need  replacing?
