10 years ago,
Wilderness
Family set out
to create a
mayonnaise
that used only
traditional
oils, one that
we could use
for our family
and feel good
about.
Over
the years we
have tweaked
and tweaked
this recipe.
There have
been times
when we had
the formula
co-packed for
us, there have
been
formulators
who said it
could not be
done, but we
have remained
steadfast in
our desire to
create this
type of mayo
regardless of
the
obstacles. We
recently had
our mayo
approved by a
process
authority at
the University
of Nebraska,
at the request
of the FDA!
The
last tweak
came a few
weeks ago when
we removed the
trace amount
of Xanthan gum
we had added
as a
stabilizer and
added an
organic
sunflower seed
lecithin. We
have been
cautiously
optimistic and
tested it
quite
thoroughly.
And today,
this mayo
seems to be
the best
recipe yet!when
