It all depends on your users, how big their mailboxes are going to be, your
servers network connectivity and what your SLA is / will be.  You could
easily fit 3000 users on a single server ...but will that capacity meet your
SLA ... will you purchase a server with a single 2ghz Celeron processor or a
dual core Xeon?  Do you need some form of high availability? 

 

Understand your environments requirements and go from there.  Don't buy
hardware and then try to make it work with what you need.
