System Requirements for Exchange 2000 server

Okay, we all can find the "minimum recommended system requirements" for
Exchange 2000 from Microsoft.com which laughingly calls for a 166MHz
processor, 256MB of RAM, with Windows 2000 Server.
I'd like to hear some "real world" recommendations for a server to support
around 600 mailboxes in a single site now with expansion to 1000 in the next
5 years.
