Spoof Messages

Hello All,
Please help me out.
We are getting so many messages everyday. The mails are using our address
with our employees names. But some times we get the message from our ex-
employees using our address. But i checked the mails using message
tracking, the mails did not deliver from our server. BYW- we were using
exchange server 2003, with windows 2003 wih symantec anivirus for
exchange.
Now my question is how to stop this type of spoof mails.
