If the goal is simply to restore individual emails, why not just use
Deleted Item Retention?  The user is not going to delete his mailbox...

I understand that the Brightstor ArcServe (windows) Brick Level backup
of each email box is extremely slow (taking 23 hours to perform a backup
now). My boss insists we use this function and figure out a way to make
it faster, as he wants to be able to restore individual emails for each
employee.

Any suggestions on an alternative?
