It means that other DNS hosts out there will cache the MX record details for
the TTL interval.  If that mailer has sent you an email prior to the change
(say 1 minute) then they won't have to look to your DNS servers again for
the TTL period resulting in TTL - minute until it gets the new mail record.
During that time, it will try to send to the MX record as it knows it so
potentially, yes you could stop mail flow for those mailers and instead
should keep a mailer for the new and old for the TTL length of time.  
 
What has worked in the past (we do plenty of mergers etc) is ahead of the
change to reduce the TTL to something more managemable.  Or put another way,
as low as it can go according to the implementation.  1 hour works out
pretty well for most changes, but that may be different for you.  Then on
the day of change, change the MX record, wait for TTL time, then remove the
old if you want.  Wouldn't matter, no mail would go to the old mailer.
Typically, I like to wait longer and have a zombie mailer sitting out there
until all the DNS hosts update their records.  After you're sure you have no
more cached mailers (you've waited the TTL plus some safe amount of time)
you can remove the old mailer from the network.

Changes to DNS records can take from 6 to 48 hours to propagate, depending
on existing TTL and configuration of other DNS servers on the Internet.

I don't like to do something and find out the hard way that I have really
messed it up -

Do you know how long it takes for an MX record to change? to propogate?

The OWA URL will remain the same.

 

Changing the MX record only effects how other e-mail servers on the Internet
locate the e-mail server that is designated to receive e-mail for your
domain.

Does anyone know what the consequences are of changing the mail MX record?
We are looking to setup a SPAM filtering service that needs us to redirect
our MX record to their server - but I am confused about what that will do to
our OWA - because part of the current MX record is the URL for the OWA?
Does this question make sense?  I want to make sure I know what is coming
when I change the MX record.
