How to retire original Exchange 5.5 server afer upgrading network to 2003 server and 2003 Exchange server

HI, 
 
   I hope somebody can help.  We just upgraded an NT 4.0 network to 2003.
As part of the upgrade we installed a new Exchange 2003 server into the
exsiting Exchange 5.5 organization that had a single Exchange 5.5 server
  We tought we were doing ok. We migrated mailboxes and everyone can send
and recieve email until we take the old Exchange 5.5 server offline and then
nobody can send email out to the internet.  I think the new Exxhange 2003
server is using the internet mail connector from the Exchange 5.5 server.
When I tried to create a new connector on the Exchange 2003 server it asked
for a link to the Exchange 5.5 orgainization.
  We want to wipe the old Exchange 5.5 server and reload with a new OS.  Can
somebody tell me how to get the new Exchange 2003 server to operate without
the old Exchange 5.5 server running in the background?
