There are a few articles written over at the MSExchange.org website that discusses the steps for hosting to include setting up the OU's in AD and recipient polies in exchange.

I'm hoping that someone can point me in the right direction. I'm
wondering if out there is a "How-to" on getting hosting working on an
Exchange 2003 server?? I prefer to have a GAL for each of the hosting
sites - is that even possible??
Any help to get this working will be greatly appreciated!!
