If by "link" you mean get the user's their old emails, just exmerge all the
mailboxes and reimport them into the new Forest you created.

If by "link", you mean coexistance, then you'll have to look into 3rd party
products like MIIS or Quest.
Though for what you are trying to do, that would be overkill to say the
least.


As a final comment, if the new Org,admin group,admin group
exchangeLeagcyDN's match, you can just make a full backup of your old
Exchange box and redirect the restore to your new server.
Or you can make them match using adsi or the exchangeLeagcyDN tool from MS.
