Hi Sandy,
Speaking is the best way to practice speaking. Start by having a conversation. 
If she is interested in learning for a specific purpose (work, travel, etc.) 
then use that as the topic. Then try simulating an actual conversation, such as 
a meeting with a customer or booking a trip. You could also listen to songs or 
watch TV shows or TED talks together and then discuss them. Correct her gently 
and have her make a list of new words or phrases that she wants to remember.
