No 2 "the castle was restored and in 2003 it was opened as a hotel "- this sentence might be grammatically correct but it is very very heavy and again, the time phrase might sound better in the end. BTW when you use AND or BUT and the same tense you do not repreat the subject (even as a pronoun) and the first word of a two-word verb. You repeat the verb when the subject is changed and by putting in the time phrase you somehow broke the connection. The castle was restored and opened as a hotel. The children were playing in the garden and shouting loudly. I am sitting at the computer and thinking about grammatical problems!
