I have but it is harder for them. One is moving side to side and one up
and down. They still need to cover the same ground and some manage to
figure that out. I found my first pacer (that trotted single) got
pacing because he couldn't keep up with the trotter's walk. He'd pace
to match her walk and then just keep going when we sped up. I have
driven 2 pacers (that stayed pacing) and that was actually easier for
them then trot/pace.
I now drive a pacer/trotter pair but since most pacers actually trot by
choice this pair trots 99% of the time. (and the one that will mix gait
the most is the trotter) I picked out the "pacer" matching her walk
(especially) and length of trot stride to my trotter. They have become
a great pair and work together well. In the photo (if it is included in
this email) The pacer is the far horse.

Could you drive two standardbreds one that trots and one that paces together as a pair with the different gaits?
