If you're modelling the late 1960's, I'd go with the upholstery colours as
built. Here's the interior colour info compiled by Russell Pinchbeck from
the NorWest HO 2200-series CPR coach kit instructions.
Why as built? I rode The Canadian in late October, 1978, and the seats in
the Skyline dome had faded to a light grey from the red cloth that they were
originally upholstered (lots of photos are on the back of CPR system public
TT's from the 1950's) in. This appeared to be the original material. I
can't see the 2200-series coaches having been re-upholstered if the CPR
didn't re-upholster cars on The Canadian.
But coaches would have had less sun damage to their seats than a Skyline
dome's.

=====================================
As compiled by Russell Pinchbeck--
Wainscot Panels
2235-2256 Green
2257-2277 Blue
2278-2298 Special Indian Red
Window Column and Curtain Box
2235-2256 Green
2257-2277 Grey
2278-2298 Salmon
Ceiling
2235-2256, 2278-2298 Tan Frost
2257-2277 Grey Frost
Window Sill inside of Stainless Steel frame is Black
Cars were equipped with Heywood (should be cited as Heywood-Wakefield) Sleepy
Hollow Chairs which were probably Grey except for cars 2257-2261 which got
Ajax Dreamliner chairs that were Blue.

Thanks guys - typically now I am more confused than ever ! The Algoma shots
show some older maroon seats in the ex CPR 2200's while the diagram that
Jeff referenced claims the seats were from the Ajax company and were
"blue"... whatever blue that is......
Understanding that it is likely that the coaches may have been referbished
in their life with the CPR, does anyone know what seat colour, maroon or
blue would have been a likely choice in the late 1960's for these coaches ?
Thanks in advance
Mike
