There aren't a whole lot.  IIRC, there's a version of POP-3 that uses
SSL, allowing an encrypted e-mail connection.  But it's not very
widespread.  Encrypt anything you don't want anyone else to read. 
That's pretty well all I can give you.  It's shared bandwidth, so
anything unencrypted gets sprayed all over the place.
