Vegan Mandrin Orange Smoothie Bowl
For those of you unfamiliar with vegan foods, vegans are like vegetarians
except they eat NO animal products to include butter, cheese, milk, eggs, or
even jello. I have friends who have been vegans for 40 years or more and
they have shared some amazing recipes with me. This is one of those recipes
that I DO prepare frequently.
Coconut is one of my favorite food in all of it's forms. I even often fry
(or stir fry foods in coconut oil).
The mandarin oranges provide vitamin C, while the pistachios and chia seeds
offer protein and fiber. In fact, this smoothie bowl provides 14 grams of
fiber which is 56 percent of your daily dietary fiber needs!
Here's the recipe:
Ingredients:
1/4 cup unsweetened coconut milk
1/4 cup unsweetened vanilla coconut milk yogurt
1 tsp. vanilla extract
1/2 frozen banana
1 1/2 peeled seedless mandarin orange, divided ice, as desired
2 Tbsp. pistachios
2 Tbsp. dried shredded coconut
2 Tbsp. chia seeds
Directions:
Blend coconut milk, yogurt, vanilla, banana,
1 orange, and ice as desired. Pour into bowl, and top with remaining orange
wedges, pistachios, coconut, and chia seeds.
Serves 1.
