Serve it at the table with spicier dishes to provide a cooling complement between bites. It can be served in small bowls or over rice. What follows is my personal favorite, because you can whip it up in about ten minutes and it has a nice balance of flavors. The mint leaves or cilantro add a nice visual appeal to it, as well. Usually, this is made with a spice mixture called Chaat Masala, but since I did not have all the ingredients on hand to make it, I came up with this instead. It worked very well. Makes 4 to 6 servings 1 cup plain yogurt, whisked until smooth 2 to 3 tablespoons lime juice 1 teaspoon roasted ground cumin 1/2 teaspoon roasted ground coriander 1/4 teaspoon black pepper or to taste 1/4 teaspoon salt, or to taste 1 pinch cayenne pepper, or to taste 1/2 teaspoon sugar One cucumber, peeled (optional) and diced 1 large tomato, diced 1 large red onion, diced 1/4 cup finely chopped Cilantro or mint leaves 1. Whisk the yogurt together with the lime juice, and stir in the spices. Taste and adjust seasoning. 2. mix in the cucumber, tomato, and onion, and stir until everything is smooth. 3. Mix in cilantro or mint leaves, if using, and serve.
