And I like the thought of it too. I would add a generous among of grated
mozzarella to the skillet those last five minutes and allow it to melt. Yum!

I actually like the way I imagine this tastes once it has landed on my plate.
I’d probably saute the garlic and onion in the butter after the zucchini is
cooked, then add it back to the skillet. A little Parmesan wouldn’t hurt
either. I’ll keep this one and make it soon.

Today I want to share a satisfying vegetarian dish that you can eat alone or as
a side dish.
I enjoy going to the local Farmer’s Market and picking up fresh vegetables.
For this dish I don’t add any salt and I substitute the powder garlic for fresh
mince garlic.

Italian-Style Zucchini with Tomatoes

Cherry tomatoes and zucchini come together in this recipe to create a colorful
and healthy dish that is a perfect companion to any meal. Plus, with just a few
basic ingredients it can come together beautifully.

ingredients,
3 zucchinis, sliced
1 cup water
1 Tablespoon butter
1/2 onion, thinly sliced
1 cup halved cherry tomatoes
1/2 teaspoon dried basil
3/4 teaspoon garlic powder
*Sugar’s notes-I like fresh garlic, so I would mince 1 or 2 cloves of fresh
garlic instead*
Directions:
1. In a large skillet, add zucchini and water; bring to a boil over high heat.
2. Reduce heat to low and simmer, covered, until zucchini is just tender, about
4 minutes.
3. Drain zucchini.
4. In same skillet, melt butter over medium heat. Add zucchini, onions,
tomatoes, basil, and garlic and simmer about 5 minutes, or until heated through.
