ETHNIC MAGIC
Ethnic cooking has come of age again. What was once basic family fare can
now mean big business everywhere. Never before have there been so many
Italian, Greek, Chinese, and Mexican restaurants and snack shops. The Ethnic
magic is the spices used to create these traditional flavors. Some of the
key flavor ingredients in Ethnic cooking are as follows:
Chinese: Ginger, scallions, sesame hot oil, garlic, and soy sauce.
Italian: Garlic, basil, oregano, fennel, marjoram, parsley, and onion.
Mexican: Chilies, oregano, cumin, garlic, coriander, cinnamon, vanilla, and
cilantro.
Spanish: Saffron, paprika, garlic, onion, parsley, sweet pepper, pine nuts,
almonds, and olives.
Middle Eastern: Oregano, mint, bay leaf, garlic, onion, cinnamon, turmeric,
fennel, olive oil, and lemon
Caribbean: Curry, garlic, red pepper, ginger, nutmeg, cinnamon, allspice,
cloves, and coriander.
People are venturing into new lands with their dining habits. Why not try a
stir fry or entertain with a leisurely fondue. Have a Greek dinner or a
Mexican Fiesta. Cooking can be fun!
