The problem with the Tools > Options > View tab > Field Shading tool is that it is generally user-dependent. I like to know what is a field and what isn't, so I always have the fields showing. Most people I help have them turned off or only on when selected. I know it's possible to force the field shading settings via a macro or batch file, but I'm not the person who can tell you how. OK - I'm with you now. You can shade these fields on screen using Tools > Options > View tab > Field Shading, but that shading doesn't print. The most likely shading for fill-in fields is using the borders and shading, but I think someone has mentioned that. Are the fields aligned in a table that might have the shading?
