First, there is a tutorial of using audacity with jaws from

Second, I'm going to quikcly show you on how to cut, copy, paste etc
1. You need to select the track you want to edit. To do it, press enter
on the track. You should hear jaws says something like track name select
on.
2. You need to make the selection by mark the start and end of selection.
to make this, press the left bracket key for start, and right pracket key
for end selection, then press spacebar to play the selection
3. to cut, press ctrl+x, to copy, press ctrl+c, and ctrl+v to paste.
4. audacity has a feature called cut preview, let's you know how the
audio like after cutting. So after making a selection, you can press C.
Audacity will plays some second before and after the selection. This
would save alot time because you can adjust the selection if you don't
like.

Please recommend Audacity tutorials intended specifically for blind
users with JAWS screen reading software.
I've been interviewing people and would like to cut, copy & paste
audio clips into cleaned up edits for podcasting and local college
radio. Several sighted friends have explained the general concepts of
how they use Audacity, but I feel like I need advice from a fellow
blind person to really understand.
