McMaster sells some rupture disks but it looks like they're just below the
pressure you are looking for. Fike is the big manufacturer that comes to
mind; they are a "request a quote" kind of company, but they certainly can
do what you need.

looking for a burst disk in the 800 psi range. The LOX popoff valve is set
for 650 psi. Operating pressure is between 500 to 600 psi.
I toyed with the idea of making them myself but the amount of testing is
large (a few hundred tests to get reasonable confidence and the need to
make production jigs). I decided to look at a ready made solution.
Getting the test stand set up for a early May static shot. Testing the
dome loaded pressure regulator and a turbine flow meter monitoring the
fuel.
