Hello together,
the issue is solved!
PhotoShop checks only once at startup the monitor profile. So if I switch
the monitor setting while PS is running, it does not recognize this.
Now everything is fine and as expected. The colours remain the same (as far
as one can tell) if I restart PS after having changed the monitor profile.
The solution was pointed out to me by the EIZO support.

Some operating systems don't actually do color management even if youprovide them with a profile.
They only provide a way for color management-aware applications to knowwhat profile to use to do
their color management. A classic way to tell is to open a non-graphicsrelated application (file
manager, word processor, etc) and compare the colors.

co-operation. Some systems may provide a default sort of color management
for
applications that are color unaware by assuming that images not otherwise
marked are sRGB and doing the color conversion without further prompting,
but if an application is dealing with image sources encoded in a variety
of colorspaces, then that encoding space needs to be conveyed to the
system if it is to do the correct color conversion to the display.
The difference for an application between a system that embeds the
CMM in the display system API and a system that doesn't, isn't
actually all that great. The biggest benefit of the former is that
it provides better behavior for non-color aware applications.
