I just tried what you said and the picker is only giving me 5 minute increments. The reason I am not using the alarm in the clock app is because that alarm goes on and on and on and you have to interact with it to make it quit. The calendar alert just dings once and then quits by its self which is what I want to happen in this case.

Just open Calendar and go to "add", in the upper right of the main Calendar screen. From there you simply fill in the fields and choose the options, then hit "done". Yes, the minutes picker moves in one-minute increments, not five. If you need an alarm for that exact a time, why not use the alarm function of the clock app instead? Easier than having to clear Calendar alerts across all your devices and having them clutter up your past events, in my opinion anyway.
