That’s right, so you have to add contacts to your favourites. So, in the phone
app on the iPhone and in the contacts tab, open a contact’s card and there
should be an add to favourites button you can double tap on.

pressing the crown seems to get me between the clock face and the home
screen, if i'm in an app it also gets me out of it and back to the home
screen, is it press and hold down the crown to get up siri, haven't tried
that one yet
any other basics i need to know?

Ok what tips and tricks do you want to know? For example to answer an
incoming call you can either double tap on the answer button or do the
familiar two finger double tap. To make a call, either use the phone app on
the watch itself or press the friends button and a list of favourite
contacts who you can call appears. Note the latter feature will go away with
watchOS 3 when Apple will introduce the dock.
