Two accessibility improvements in 2010 over 2007 that I'm aware of:
1. Moving around the lower ribbon, the shortcut for moving from one group to 
the next was changed from Shift+RightArrow to Control+RightArrow. The problem 
with the 2007 version was if you landed on a group that had an editable area as 
the first item, the keystroke to jump to the next group just started selecting 
it. 
2. Office 2010 has the ability to customise the ribbon - you can show or hide 
tabs or groups, create your own, or move them around so that they are in an 
order that suits you. While not particularly straightforward to do with a 
screen reader, it does mean you can simplify the interface.

is there much difference between office 2010 and office 2007 in terms of 
accessibility, is office 2010 much easier or simpler to use for a blind person? 
are there many feature improvements, it seemed to me that there weren’t many 
extra features in office 2010 compared to office 2007.
