You are right, Chris, remapping the Majic Gesture won’t help in this case.
Like yourself, I understand exactly why this is happening, yet many a time music starts chiming on my phone at the wrong moment!
Personally, I believe that including playing music as one of the Majic Gesture functions wasn’t the shrewdest decision. Especially that it takes precedent when VoiceOver somehow loses focus.
All who agree, how about joining me in submitting a request to VoiceOver developers to address this issue? The gist being to add an option to exclude play/stop music from the Majic Gesture functions, or better yet to add an option to limit it to work only when any of the media applications is in focus.

As Steve said, you’re likely to accidentally start media playing if you attempt to end a phone call that’s already been ended.  I also often accidentally start media playing if I do a magic tap to try to start dictating into an edit field that I haven’t yet  activated with a one-finger double tap.  
Yes, it’s a bit annoying, but I think if you understand why something has happened then you can quickly reverse it and hopefully not do it quite so often in the future.

So many times, I’d be doing something completely different on my iPhone, and in the process the phone start playing music or YouTube or what have you. This is getting extremely annoying and inconvenient.
