Shea, try all your old keystrokes from Office 2003 if you can remember them. You need to follow through with another letter for something like Tools though - Alt-T then O for Options, for example.
Try F7 for spell-check.You may find some helpful links on my Office 2007 keystrokes page, which I take it might also be useful for 2010, though I've never used 2010, so can't be sure.
