Gui - tick "create sfx archive" box.
Alternative command line version (assuming you installed in default
location of course!).
Note in the example below - archive.exe is the name of the archive you
want to end up with, and dirname is the directory you want to
compress.
Probably easiest to cd to the directory just above what you want to
compress, first! Enjoy - let me know how it goes.
"C:\Program Files\7-Zip\7z.exe" a archive.exe -mmt -mx5 -sfx7z.sfx dirname
