[windows2000] Upgrading Server 2003 from beta

I have Windows Server 2003 Standard Edition beta and want to install Windows
Server 2003 Enterprise Edition (non-beta).
 
I believe I can't upgrade (or it isn't a good idea, even if I could).
 
Assuming I have a full backup and do a clean install of Server 2003, what do
I NOT restore to get me as close as possible to my existing environment?
(desktop, settings, etc)
