I don't know about rebuilt... I mean, to be safe, I'd probably rebuild them, however (in theory) you could just run DCPromo on them and remove AD so you have a big pile of standalone servers, and then run DCPromo again to begin the new domain.. At least that way you wouldn't lose any sharepoints.. You'd lose the permissions, but not the data and the shares themselves... And yes, the member servers should just be able to join the new domain, albeit with the permissions issue...
