Yes to both. Increase in capacity depends on what you're doing, but I
have to say Office 2003 on W2k3 is dream-like.

Would I see any stability or performance increases if I upgraded my 2000
TS's to 2003 TS? Is there any increases capacity that 2003 TS would
bring?
In general, the biggest stability problem is with the print spooler
crashing, otherwise, I've not really had many problems related to
applications.
