Jeffery, I usually use either Bainbridge Alphamat Artcare # 8463 Spanish White Vellum or white Rising 4 ply museum board (100% rag) for the mount and overmat. Both boards cut cleanly and give a good looking finished product. My feeling is that if it is worth mounting, it is worth doing the job correctly. I have not seen an effect of the mounting board on print stability, but I have had some older mats yellow due to the nature of the matboard - older, cheaper, non-rag board. Even some of the buffered stuff has yellowed - paper based and not rag or alpha cellulose.

If you use a less-expensive board, could you tell me where you get it? (assuming it can be purchased online)

Try United Mfrs. Supplies (www.unitedmfrs.com ) - they have a wide selection of mat board, foam core, and framing supplies. The board will be in 32x40 sheets. Make friends with a local print shop and have them cut the board to size with their paper cutter. They should be able to cut 5-10 sheets at a time.
