SharePoint, especially WSS 3.0 or Office 2007 server is quite accessible. On the top, there is a link called "Turn on More Accessible Mode" which "renders custom controls as an equivalent standard HTML controls." Another helpful feature is the its mobile version of the page which UI is much simpler. You can look at the demo at:

We do use Sharepoint at my place of work. I use it only on occasion and,
with this limited experience with it, I have found it to be accessible.
It comes up like a web page which, in our case, is relatively easy to
navigate.
There may be other functions that I don't use which may not be easily
accessible, but, according to my limited experience, so far, so good ...

Given that it is a Microsoft product, you may find some
accesssibility-related info on their website.
