Look for books on cocoa over on the Apple site and there's at least one book
on cocoa interface on empowermentzone.com.  That should get you going well
on the Mac side of things and well on your way towards getting things
working with Linux.  The accersizer software package can be used by you so
you'll get an idea how well you're doing with Linux accessibility with
respect to Orca too.
That's regularly announced over on the orca_list which is hosted on
gnome.com.

Hello all,
 
I've got a lot of experience programming assembly and Delphi.  However, I'd
like to start developing gui applications using java.  I'm particularlly
interested in sWT as my research on the web indicates this set of widgets
tends to be the most accessible out of the box.  I really want the apps I
create to require little if any specialized screen reader scripting.
 
I'm also interested in deploying my apps on linux and OSX.  I've been
developing win32 apps for a very long time, but want to branch out.
 
I have a Safari Online account, so I'm interested in any recommendations you
may have for books I can find there.  I'm also interested in any online
articles, tutorials, podcasts or screencasts.
 
I've downloaded and installed the latest JRE and Eclipse IDE/SDK.  That's
all working, I just need to know how to leverage the years of experience I
have to best learn java/swt best.
