as per my experience, both the UML and VISIO are not accessible.
recently when i had  both of these in my cariculam, i found it
trubblesome doing it at my own.
what i've done was  that i learnt  the theoritical parts of it,
understood  all the models and diagrams and then i used to take
sighted help in order to draw/read  them on computer.
as per writing the diagrams, i am doing it on text or code depending
on sittuations.
though it was hard initially, but i've managed to convince my
instructors that being a visually impaired, designing is not my cup of
tea.
i have a reasonable understanding of OOPS concepts, database schemas
and else, so they have allowed me looking on to those areas instead.
