My preference would be that you should have it automatically log out when
Outlook is closed.  If you are working with many users on one PC -
especially given that in a school you may have issues of data protection
to consider - you should encourage users to at least log out if not
actually force them to do it!

It's all too easy to get up and walk away from a pc and leave your screen
visible to others, with all those wonderfully emails that you don't want
anybody else to read all on show!

Well, you can put a password on the Outlook data file and/or set up
Outlook Profiles (as opposed to Windows Profiles...

Do the former by going to:
File > Data File Management > highlight your PST file > Settings > Change
password
