Is this template protected?  Are you able to type into the cell that has the
date in it?  If so, click into the cell with the date in it and look at the
formula bar, you will probably see a formula like =TODAY() ... Just replace
the formula with today's date (or you could copy the date and Paste
Special>Values) ... However, if the date is being generated automatically in
a protected cell, you will have to unprotect the template before you do this
and that might require a password.
