If it doesn't work directly in pages, you could always use one of the apple scripts on softcon's mac pages
http://www.softcon.com/mac/There's scripts there to get the word count from text edit, and you'd only need to change the name of the application (probably) to get it to work in pages. I don't have pages, so obviously haven't tried this, but assuming it behaves itself, it should work properly.
