All,

In the interest of completeness, in order to ensure that your ' is spoken as 
(apostrophe) everywhere, do this:
1> open system preferences which you will find under the apple menu from 
anywhere on your mac.
2> open the keyboard button by pressing space or vo space as you prefer.
3> open the text tab in the same way.
4> vo to the right of the substitutions table and check and uncheck checkboxes 
as appropriate.  the single quote is the farthest to the right but it seems all 
you have to do is uncheck the smart quotes and dashes checkbox.
