From the Users and Group Preferences. first authenticate as an administrator and then pick the former owner's account. YOu just select the, remove, button. TYou will then have a dialog that will ask you whether you want to completely delete the user's home folder. archive it to a disk image or keep it in place with, deleted, appended to it.
