Well, there's the defaults that come with vista, which in that case is Windows Mail, but I'm using thunderbird, which is available from www.mozilla.com I'm not sure if 7 includes an email client, but I've heard somewhere or read something that it doesn't, in which case, you could use Thunderbird, Eudora, or any other third-party client.
