I'm about to get Outlook 2003, so perhaps I can be of more help soon (in case it's that different from 2002). I think this discussion needs to take place on the list for the benefit of all. For outlook 2002, it's easiest if you set your view to "active appointments" so that they show up in a list format. Adding new appointments is straightforward unless you need to make use of the "schedule a meeting" feature in a corporate environment (with an exchange server).
