Darren, second one first.
When you brought up the customize listviews (insert f2, customize listviews)
did you find any "blank" listview items? If you did make sure that they say
speak item. Then unload and restart jaws. I consider this a bug, jaws
shows graphics such as attachment, unread, read, etc. as blank in the
listview.
The first one is a little harder. My first thought would be to go into your
verbosity level preferences and make sure you haven't unchecked anything you
think should be checked. You might try temporarily switching to another
verbosity level with insert V to see if that gets you the speaking of the
text back. If it does, then it is probably something in your verbosity
preferences.
Also, what is your typing echo? Make sure it isn't set to none with insert
V to check it quickly and then you can make the change in your configuration
manager. Those are the first places I would look. And it does seem you
need to unload and restart for changes to take effect, sigh.

Hi List.
I've got myself twisted in knots with OE6. In trying to make some
alterations to the way Version 7 performs in the application, I appear to
have lost other features that I like!
When filling in an e-mails recipient, before JFW would announce JAWS-UK
after I typed J. Now there's just silence. The complete address is there as
before, but I've lost the confirmation from JFW. How do I get this back?
Secondly, I'm no longer being told which messages are "Unread". How do I get
this announcement back also?
I've spent so much time tonight messing around with configurations, that I
no longer know which end is up!
