Ok having a rethink this is the "cheap" options I have come up with....
 
1) Got a version of VNC for the IPAQ - tried and tested adn works fine!
2) VPN into the Server, then launch pocket IExplorer and access OWA!
3) Terminal Services - Although I have now found a problem with Terminal 
Services on the IPAQ - Not sure if the problem is related to my Server or the 
IPAQ - Does anyone know of a IPAQ list as I dont think discussing this on here 
is a good idea :o)
4) IMAP using SSL - but I dont have a certificate, and from teh sounds of it, 
BA with IMAP is not good! so I am now moving away from this!
 
If I could get option 3 to work, I would be VERY happy :o)

You are absolutely right!  Since Simon mention he was about to leave the 
country I thought OWA would be a quick fix,  the secure IMAP4 is really the way 
to go for the PDA's.

Man, you beat me too it!  I was just going to say to check your Exchange 
server.  
 
You do have the option in IMAPI4 service to change from Basic Authentication to 
NTLM.  Right-mouse click Default IMAP4, click Properties, then click Access 
tab, and click Authentication... button.  If basic authentication is fine, 
start thinking about using SSL for it.
 
On the ISA server do you have under Site and Content Rules - SMTP Outbound 
rule?  It should have been created by your Mail Secure Wizard to allow your 
exchange to send outbound messages.  Also, verify that your Exchange can 
resolve external FQDN, (example - nslookup www.isaserver.org
