You sure can.
You'll have to create a special protocol definition, since that "Server"
protocol doesn't exist by default.
Then you  create another server publishing rule that uses the new protocol.
Examine the existing "Server" protocol definitions to get a handle on how
they're generally constructed.

Currently I have 1 web server published using server publishing because we
need to know the external IP address. The ISA servers listens for traffic on
port 80 and shoves it onto the internal web server.
If I was to set up another web server to answer on port 8080 can I do
something on the ISA server to allow both port 80 and 8080 to be listened
too ?
